  1. Get 1 whole gobi
  2. Make ready 3 potatoes
  3. Make ready 1 onion

  5. Take 2 tsp chilli powder

  7. Get 0.25 cup yogurt
  8. Get 1 tsp kasuri methi
  9. Get 2 tbsp coriander leaves

  19. Prepare Jeera/ cumin seeds
  20. Take 1 tsp coriander powder

Gobi is one of favorite vegetable and so I make many different dishes using this vegetable e.g. gobi matar, gobi capsicum, aloo gobi, gobi paratha. This Aloo Gobi curry recipe is authentic, juicy, and mouthwatering with a surprising added touch of Aloo Gobi - The Classic Potato & Cauliflower Dish. There are as many versions of. Aloo Gobi Masala is usually made as a gravy but here we are going to try the dry curry version.

Instructions to make Aloo gobi curry:

  1. In a pan take 2 tsp oil. Add onion, ginger garlic paste and ginger. sauté for awhile until onions turn golden brown. Now add cashews and tomatoes and sauté for 5 minutes.
  2. Cool it and blend the ingredients in mixer with roasted gram and 3 tbsp raw rice seeds. (This is to give thickness)
  3. Now in a pan take oil and sauté with jeera, bay leaf and cinnamon stick.
  4. Further add chilli powder, turmeric and garam masala and sauté in low flame for around a minute. This is to give a bright colour to the gravy. Now mix the onion and tomato paste and sauté for 5 minutes
  5. Also add coriander powder, salt and sugar.
  6. Further add potatoes and a cup of water and boil it for 10 minutes
  7. Now add gobi to the same mixture and boil it for another 15 minutes until gobi is cooked well. Add Yogurt. Add water if required.
  8. Now add crushed kasuri methi and coriander leaves and serve it hot with roti.

This goes very well with Roti / Rice. Aloo gobi curry is made as a dry curry as well as the vegetables bind to gether and makes a good combo for rotis and chappatis. The vegetables are chopped to desired sizes and sauteed in oil along. Aloo Gobi or Gobi Aloo - Spiced Potato and Cauliflower is a favorite side with Indian meals.
