  2. Get 1 litre milk
  3. Make ready 100 gms khoya
  4. Get 3 Cardamon powder

  6. Get 150 gms cut mix dry fruits(almonds, pistachios and raisins)
  7. Take 100 gms sugar(you can increase/decrease quantity as per taste)
  8. Get 4-5 threads of zafraan

  1. Wash & clean the carrot. Trim the edges and peel the skin. Now grate them to shreds.
  2. Heat a big non stick vessel or pan and put the shredded carrot, add milk and let it start boiling
  3. Let it cook for over 45 mins on low flame and add the mix dry fruits before the milk completely dries off.. keep stirring
  4. Once the milk has almost dried, add ghee and start stirring the halwa and let it fry until it changes colour
  5. Now add khoya and keep stirring
  6. Lastly add sugar and zafraan, keep stirring until you see the ghee on the sides of the pan.
  7. Garnish with khoya & nuts and serve

For cooking gajar ka halwa, a cooker or kadai is usually preferred. Carrots must first be grated and then dried before cooking. Reheat carrot halwa just before serving with a little milk. If not serving immediately, refrigerate carrot halwa and re-heat and serve when desired. This traditional delight Gajar Ka Halwa (गाजर का हलवा) is also known as a mother of all the desserts.
