Aloo Poori or Puri Sabji is a North Indian breakfast-lunch recipe. Sabji is a spicy potato dish which is served with puffed up, deep fried Indian bread poori. I have been making this breakfast 'aloo poori' aka 'poori sabji' often lately. But I realized that I haven't.

Steps to make Palak poori and Aloo Matar:

  1. Rinse and wash palak leaves.Boil water and add washed palak leaves until palak get soften.
  2. Strain palak with the strainer and allow it to cool.
  3. Transfer it to mixer jar, add ginger,garlic,green chillies and grind it to smooth puree.
  4. In a bowl,add wheat flour, jeera,salt and palak paste.
  5. Knead flour to a semi soft dough by adding little water if required.
  6. Make a small ball out of it.Dust flour and roll it to a small poori slightly thick using rolling pin.
  7. Heat oil in a kadai.Slide poori in a medium heat oil.Fry and poori puffs.
  8. For Aloo matar gravy.First grind roughly chopped tomatoes,1/2 onion,chopped ginger and garlic to a smooth paste.
  9. In a pan add butter, jeera and fry for a minute.Add another half finely chopped onion.Fry for min.
  10. Now add Ginger garlic paste.Add tomato puree,For puree add spice powders,salt and cover and allow it to boil for 5 minutes.
  11. Now add half boiled potato and peas.Cover the lid and allow it to boil.Add water if required.so that veggies get cooked.
  12. Now Aloo matar is ready to serve with hot palak poori.

Alu Mutter Poori is a deep fried bread. Potatoes and Peas are tossed in masala and is stuffed in the dough and deep fried. This Aloo Palak is one of my personal favorites.
