  6. Serve it with your own sauce. (Ketchup or soysauce with onions and tomatoes)

Use a fork to gently smash and flatten the eggplant. Pour half of the meat mixture on top and spoon some egg over the top. Heat oil in the same pan, and slide the eggplant, along with all the egg and meat mixture. "Talong" is the Tagalog and Visayan word for eggplant. "Torta" means omelet in Tagalog but means different in Visayan. But let's just stick with the Tagalog term for the eggplant omelet which is "tortang talong". This is a popular dish in the Philippines because it is inexpensive, versatile, and simply tastes good.
